Soft Idli
Idli is a household South Indian dish. The challenge is all about making it soft, so that it instantly melts in your mouth!!

  • 2 cups Idly rice
  • 1 cups Whole Urad daal
  • 1 tbsp Fenugreek seeds
  • salt
  • 1/2 cup (Ponni rice or Sonna Masuri rice) Cooked Rice

  • 2 cups Idly rice
  • 1 cups Whole Urad daal
  • 1 tbsp Fenugreek seeds
  • salt
  • 1/2 cup (Ponni rice or Sonna Masuri rice) Cooked Rice
Instructions
  1. Place the Idli rice in a deep bowl and wash 3 times and soak in water for at least 5-6 hours
  2. Wash Urad dal, fenugreek seeds and soak them in water for same time
  3. Drain the rice and place in a blender
  4. Grind it with 1/2 cup of the water to a smooth and sponge batter (batter1)
  5. Transfer into a deep bowl
  6. Drain the urad dal, fenugreek seeds and grind it with 1/2 cup of water to make a smooth batter (batter2)
  7. The batter should not be very thick or very thin
  8. Add cooked rice in a blender and grind it with 1/4 cup of water to make a smooth batter(batter3)
  9. Mix all three batter in a large bowl or u can use hand blender to mix well
  10. Add salt and mix well
  11. Cover and keep it in a warm place (if climate is cold, then place the batter in oven). Let it ferment for 9 to 10 hours or more if required
  12. After the fermentation process is over, the batter will become double in size
  13. On a high flame, bring enough water to boil in an idli steamer
  14. Grease the idli mould and pour batter
  15. When the water begins to bubble and place all the moulds in the steamer
  16. Steam for 10 min on a medium high flame
  17. After 2 mins, remove the plates and let them cool for a minute.
  18. Remove idli and serve hot
